You can definitely do this! Just make sure the ABV is no higher than 30% which will be easy with a wine.
We would also suggest using Ceramic Boil Enhancers and Distilling Conditioner so you don't cause a boil over. If the wine is quite fruity, we suggest to only half fill the boiler as fruit wines will have a lot of residual sugars which could cause surge boiling.
Also make sure that the first 50-100mls of product is discarded during distillation.
Note: If you are going to do this in the T500 is should be set up like a pot still (saddles removed), see the instruction booklet for more information. Otherwise we would recommend using the Alembic Pot Still. This means you'll retain the flavours which you will want if you're making something like a brandy.
If you are interested in stripping the flavour out, then use the T500 in its standard set up.
Regardless of the setup, you will require Ceramic Boil Enhancers and Distilling Conditioner.
