Stainless steel saddles are preferred over ceramic as while ceramic absorbs unwanted impurities, stainless steel helps with the refluxing action that removes these impurities further.
Stainless steel saddles are also not porous so they last longer.
The optimum situation is to have 100g copper saddles at the top as they react to the sulphur compounds and eliminate them from your distillate. Stainless steel is non-porous and more robust. Together they increase the surface area inside the condenser which speeds up the reflux action.
You can also take out the saddles in the T500 to make it perform like a pot still, but you will have to change the configuration to the water distillation setup which is in the instructions here: Instructions - T500 System.
