The Air Still Pro has two different distilling “modes”. This unique 2-in-1 capability enables distillers to create a wide range of high quality light and dark spirits.
Pot Still Mode is great for making dark spirits, botanical gin vapor infusions, stripping runs and taking cuts.
In this mode the ABV (alcohol by volume) output is the same as the Air Still, starting off at ~80% ABV and continually dropping during the run. In Pot Still mode the reflux column must be empty of the saddlles (and basket unless doing a botanical run) and you must ensure the Pot Still Mode Capillary Tip [P] has been installed. Pot Still Mode is activated by pressing and holding the mode selector button for 3 seconds until the light turns Purple. Two beep sounds will also confirm the unit is in Pot Still Mode. In this mode the person distilling controls the ‘cut’s of the distillate to their liking and shuts the system off manually when assessed as completed.

Choose the Reflux Mode to create exceptionally clean and pure neutral spirits at up to 90% ABV.
In Reflux Mode the column must be filled with packing material (saddles) but the botanical basket removed. You all need to ensure the Reflux Mode Capillary Tip [R] has been installed. Reflux Mode is activated with a short press of the mode selector button until the light is green. One beep sound also confirms the unit is in Reflux Mode. The Reflux Mode Capillary Tip controls the drip rate of your collected distillate. In this mode the system automatically shuts itself off once the optimal distillate has been collected.
